We have taco night pretty often. They’re
easy to make and inexpensive, plus who doesn’t love a taco? I try to change
them up, varying the types of meat and fillings I use. Last week I decided to
try puffy tacos: tacos in a fried shell.
I’ve had puffy tacos at Mexican restaurants,
but this was my first time making them at home. I used this Martha Stewart
recipe (for the beef and shells), but I used flour tortillas instead of corn.
It took a couple of oddly shaped tortillas before I got the frying technique
down, but otherwise they were easy to make.
What goes better with tacos than a
margarita? I tried The Best Margarita You’ll Ever Have recipe from A Cup of Jo.
While it wasn’t the best I’ve ever had (Ponak’s in Kansas City holds that title
for me), it was pretty good!
