Now that fall
is nearly upon us, not only am I making the most out of my summer wardrobe, but
I’m also trying to enjoy summer produce before it's gone. One of my favorites
is corn on the cob; there’s just nothing else like it in the summertime.
It’s
delicious with a little butter and salt, but I also like to try different
combinations of toppings. This version (from Eclectic Recipes) is grilled and topped
with garlic butter and parmesan cheese. How could that be bad?
As the main
dish, I made barbecue pulled pork (recipe from Skinnytaste) in the slow cooker
and served it on toasted Kaiser rolls.
What’s your favorite summer vegetable?
