Dinner Tonight: Taco Pasta

Finally, I can do food posts again--I got my new camera!  I'm still figuring out settings and everything, so it may take some tweaking to get my pictures just right.  Tonight, I made Taco Pasta Toss, a recipe from last week's Rachael Ray Show.  It was fast and easy, and a crowd (or husband) pleaser.  I browned up some ground beef, then added onion, jalapeño, chili powder, coriander and cumin.

Next, I added tomato paste and chicken stock.  The recipe called for beer, but we drank them all this weekend in our defeat (K-State lost to Butler).   

Meanwhile, I cooked a box of penne pasta, and tossed the pasta with the meat sauce.  Since it’s Taco Pasta, we topped the bowls of pasta with shredded Colby jack cheese, then tented the bowls for a minute with foil to melt it.  This was a nice twist on pasta with meat sauce.  It really did taste like a taco and pasta rolled into one.  That Rachael Ray, she delivers.
